High Protein Chicken Meatballs
This is the healthy version of the dish above. Ground chicken, ricotta in the mix, cottage cheese on top. It sounds like a compromise and it absolutely is not.
Method
- 1
Combine the chicken, ricotta, egg, breadcrumbs, parmigiano, Italian seasoning, garlic powder, salt and pepper.
- 2
Handle it as little as possible. Ground chicken turns rubbery the moment you overwork it. This is the one step that decides whether the dish is good.
- 3
Roll them smaller than beef meatballs. Pan fry in olive oil until the outsides are genuinely crisp.
- 4
Pour the marinara over, cover, and simmer 10 to 12 minutes until cooked through.
- 5
Boil the campanelle, pull it early, toss with a little sauce.
- 6
Plate, spoon the meatballs and sauce over, then cottage cheese on top and grated parmesan.
Notes from Dom
The cottage cheese goes on top, not in the mix. That is how the original does it and it is better that way.
